DESCRIPTION This skinny veggie lasagna has 200 calories per slice and is full of chopped broccoli, carrots, cauliflower, spinach, ricotta cheese, and tomato sauce. INGREDIENTS 3 cups chopped veggies of your choice 1/2 chopped onion 2 tablespoons minced garlic 1 tablespoon olive oil 1 cup low fat ricotta cheese 1 egg 2 cups fresh spinach 2 cups tomato sauce 12 uncooked oven-ready whole grain lasagna noodles 1 cup mozzarella cheese, shredded INSTRUCTIONS Chop the veggies. Saute the onion and garlic in the oil over medium high heat. Add veggies and saute until tender. Set aside. Whisk egg into ricotta cheese and stir in fresh spinach. Pour a little sauce in the bottom of a greased 9×13 pan. Top with 4 lasagna noodles,1/2 cup ricotta mixture, 1/2 of the veggies, and 3/4 cup sauce. Repeat; top entire pan with noodles, remaining sauce, and mozzarella cheese. Cover and bake for 40 minutes at 375 degrees. Remove foil and bake for 10 minutes more or until chees

It’s my go-to comfort food! INGREDIENTS 1/2 box whole grain elbow macaroni (about 2.5 cups dry) 1 cup canned butternut squash puree 1/4 cup + 2 tablespoons evaporated milk 1/4 cup chicken or vegetable broth 1 oz low fat cream cheese 1 teaspoon salt 1/2 cup shredded cheddar cheese 1 tablespoon butter 1/2 cup onions, sliced thinly 1 large crispy apple, chopped or grated 4 tablespoons crumbled bacon INSTRUCTIONS Heat butter in a skillet over low heat. When melted, add onions and let caramelize for at least 30 minutes for the best flavor. Keep heat on low/low-medium. Cook the pasta according to directions. Drain and return to pan over low heat. INGREDIENTS 1 1/2 cups brown sugar 1/3 cup oil 1 egg 1 cup buttermilk (you can sub milk+vinegar, or plain yogurt+milk) 1 teaspoon baking soda 1 teaspoon vanilla 2 1/2 cups flour 1 1/2 cups chopped apples (I used Wealthy heirloom) 1/2 cup sugar 1 teaspoon cinnamon 1 tablespoon butter INSTRUCTIONS Preheat oven to 325. Mix ingredients in order given (except the last 3 ingredients). Pour batter into a 9×13 greased pan. Combine last 3 ingredients to make a topping and sprinkle it evenly over the batter. Bake for 45 minutes. It’s delicious when served warm!

nectarine basil salsa DESCRIPTION This nectarine basil salsa is made with fresh basil for a delicious, easy, and healthy addition to any meal. Super quick, super easy! INGREDIENTS 1 ripe, juicy nectarine 1 1/2 tablespoons diced red onion 1 1/2 teaspoons minced jalapeno (seeds and ribs removed) 1/2 teaspoon lime juice 1/2 teaspoon honey 1 teaspoon sugar (optional) 4 fresh basil leaves INSTRUCTIONS Dice the nectarine. Add sugar if the nectarine isn’t very juicy and let sit for a few minutes. Add red onion and minced jalapeƱo. Stir in honey and lime juice. Add a sprinkle of salt or sugar (or both) depending on how you want it to be flavored. Just before serving, cut basil into ribbons and sprinkle over the top.

INGREDIENTS 1 lb extra lean ground turkey 1 clove garlic, minced 2 tablespoons canned chipotles in adobo sauce (pureed) 1 tablespoon chili powder 1 teaspoon salt 1/2 teaspoon pepper INSTRUCTIONS Mix everything together until well incorporated. Add extra chipotle sauce or chili powder for more heat. Let sit for several hours or overnight. Form into 4 patties. Make a dent with your thumb in the bottom side of each burger. Dent side down, grill on medium high heat. Don’t press on the burgers. Flip after a few minutes and cook through until no longer pink. Serve on a bun with smeared avocado and nectarine salsa!
